Homemade hummus made entirely of raw, whole, natural ingredients? Yes, please. The PURE Juicer makes this process a breeze when you simply grind the ingredients through stage one. This recipe allows for modifications according to personal taste: start with our suggestions below but feel free to play around with the spices, especially the cumin and garlic! We used a #4 PURE Juicer grid, but if you prefer a super-fine grind, use the #2.
Ingredients:
- 1 can chickpeas (15oz)
- 1/2 cup tahini
- 1 lemon
- 1/4 red pepper
- 1 teaspoon cumin
- 1-3 garlic cloves
- salt & pepper to taste
Pro Tip: add a simple garnish of olive oil, finely chopped parsley, roughly chopped red onion, toasted pine nuts, and a sprinkle each of cumin and cayenne pepper.
About the Ingredients:
chickpeas: high in fiber, low on the glycemic index, and a good source of plant protein, chickpeas are a nutritious legume. They are a good source of polyunsaturated fats and low in cholesterol.
tahini: made from ground sesame seeds, tahini is rich in monounsaturated fats and contains a variety of vitamins and minerals.
lemon: high in vitamin C and citric acid, lemons also contain several plant compounds, and their bright, tangy flavor lifts the whole dip.
red pepper: bell peppers are high in antioxidants and vitamin C, as well as other important vitamins and minerals like vitamin B6, vitamin K1, vitamin A, vitamin E, folate, and potassium.
cumin: a warm, earthy spice that adds depth of flavor to hummus. Start with a teaspoon and adjust to taste.
garlic: garlic adds a sharp, savory bite. Use one clove for a mild hummus and up to three for a bolder one.
